This is actually called NORIMAKI, rolled sushi. I filled the rice with boiled carrots, raw cucumber, shiitake mushrooms and tamago yaki. You can also use canned tuna, or raw tuna, if available.
Here in Sicily we have lots of fresh tuna but mainly in May and June. Salmon is sometimes available but not to be eaten raw as in sashimi.
