In olden times in Sicily many people had sheep, goats, cows so they made their own ricotta, cheese and other milk products. This is one of the dishes they prepared with ricotta.
The ingredients are ricotta cheese, sugar and cinnamon, and of course, pasta. You can use any kind of spaghetti or short pasta.
Simply mix the ricotta with sugar to taste, add cinnamon, mix and pour over the cooked pasta.
This cheese is called "Tumma" it's tasteless, but if you add salt it will become "Primo Sale", cheese at its first salting.
