Homemade Wild Yeast Starter /Pasta Madre (pasta acida) fatta in casa

Did you know that you can make your own yeast starter at home? It's a long procedure but easy to make.

Mix 100 grams strong flour, 1 tablespoon oil, 1 tablespoon honey and 100 g. water. Let it stay, covered, for 1 or 2 days. After about 2 days, add 100 g of flour and the same amount of water, mix, and let it stay for another 2 days. At this point the starter should be ready. Mix it again with flour and water, and the next day you can use it to make bread. You need about 80g of starter for 1 kg of flour. Rising will take a long time, perhaps even 6 hours, so let it rest, preferably overnight, before putting it in the oven at 200° C, for about 45 minutes.
