A different version of cannolo

This is called GRAFFE. It's a softer version of cannoli ... the cannoli skin is fried till crisp, then filled with sweet ricotta. Graffe is a kind of doughnut dough, fried and then filled with sweet ricotta. By the way, sweet ricotta is ricotta mixed with sugar. You can also add chocolate chips and candied peel. Needless to say it is very difficult to choose one or the other, so the best thing is to order BOTH a cannolo and a graffe ... and then get a year's subscription to the gym!
