Oladi are Russian pancakes. They are made with kefir, a fermented milk. Originally yeast is used, but I prefer baking soda because they rise quicker.
Take two cups of kefir and beat it with an egg. Mix about 1 1/2 cups flour, 1/2 ts. baking soda and some salt. Add the liquid ingredients to the dry. Let stand about 15 minutes, then cook as for normal pancakes. Serve with smetana (sour cream).
