Gateau Normande .... a variation

This is one of my very favorite sweets. I usually make it into a cake .... sponge cake sliced in half and filled with cooked apples, jam and raisins, but this time I turned it into a Swiss roll.

Prepare a classic sponge roll. Cook a few apples with apricot jam, brown sugar and raisins. Whip up some whipping cream. When the sponge roll is ready spread the whipped cream on it, put the apple mixture on top and roll the roll up. Spread more whipped cream all around it.
