A Taste of Japan 4 ....homemade SUSHI
This is actually called NORIMAKI, rolled sushi. I filled the rice with boiled carrots, raw cucumber, shiitake mushrooms and tamago yaki. You can also use canned tuna, or raw tuna, if available.
Here in Sicily we have lots of fresh tuna but mainly in May and June. Salmon is sometimes available but not to be eaten raw as in sashimi.

A taste of Japan 3 ..... Ginger Pork
This is a recipe which was broadcast by a Japanese cook on JSTV many years ago. It is an original recipe, different from the traditional ginger pork.
Slice pork very thinly and flour it. Slice onions thinly (3 or 4 onions). For the sauce, mix 1 cup water, 4 Tablespoons soy sauce, one grated apple, 2 Tablespoons brown sugar and 1 teaspoon grated ginger.
Fry the floured pork slices in a hot pan, turn over and add onions. After two minutes add the sauce and cook till sauce thickens.
Serve over hot rice.

A trip to the Land of the Rising Sun / Un Viaggio nel Sol levante.
Il tofu di solito viene servito con la salsa di soia, negi (i cipollotti verdi) e il katsuobushi, che sarebbe tonno secco grattugiato, siccome non si trova qui in Sicilia, ho usato lo zenzero.
La zuppa di miso è facilissima da preparare. Si fa bollire l'acqua, si aggiunge un pò di miso, negi e tofu, ed è pronta.
Today we are into more Japanese food ... tofu and miso. Japanese normally eat tofu with soy sauce, katsuobushi (grated dried tuna) and negi (green onions). Since katsuobushi is not available in Sicily, I put grated ginger instead.
Miso soup is usually prepared with tofu so I added some tofu and negi to my miso. Then I served white rice, which can be eaten alone or with an accompaniment. As you like.

Sushi in Sicily
Yes, we have sushi here in Sicily too. This is mine, homemade. It's time-consuming but well worth the effort. What takes up most of the time is the number of ingredients...boil the carrots, cut up the cucumbers, make the omelette and so on. The rice is the easiest, just steam it with sugar, salt and sushi vinegar. Let it cool and then start ROLLING!
